does spotify still work?

yes. spotify's interface is one of the apps.

can i put spotify's software back?

yes, by flashing a stock dump over usb with flashthing.

do i need a computer?

only to install it.

how do i get back to the launcher?

during setup you pick a gesture: hold the m button for about a second, or press it twice or five times quickly. change it any time in settings, under controls, or on the car thing's page in the app.

why does the bridgething app open on my iphone by itself?

when your iphone reconnects and the app isn't running, the car thing opens it so it connects right away. to stop that, turn off open bridgething on reconnect on the car thing's page in the app, or pick leave it closed under bluetooth in the car thing's settings. iOS then reconnects in the background on its own schedule, and opening the app connects it immediately.
